Baby Apple Pancake
1/2 cup flour
1/2 cup milk
2 eggs
1 large or 2 medium size apples
2 tablespoons butter or margarine
2 tablespoons granulated sugar
1 teaspoon cinnamon
- Heat oven to 400 degrees F.
- Mix sugar and cinnamon.
- Mix flour, milk and eggs together.
- Melt butter in cast iron (this is essential).
- Remove from heat. Pour mixture into skillet.
- Peel and slice thinly the apples. Place on top of mixture.
- Sprinkle with cinnamon and sugar mixture.
- Bake 20 minutes. Serve from cast iron skillet.
- Serve with maple syrup.

Healthy Sweet Potato Bread
1 cup all - purpose flour
1/2 cup whole wheat flour
1 tsp. baking powder
1/2 tsp. baking soda
1 tsp. ground cinnamon
1/2 tsp. ground allspice
1 egg
1/2 cup packed brown sugar
1/4 cup canola oil
1/2 cup low fat (1%) milk
1 cup sweet potato (about 6 oz.) peeled, grated and firmly packed
1/2 cup raisins
- Preheat oven to 350 lightly oil an 8x4 inch loaf pan.
- Sift the all - purpose flour, whole wheat flour, baking powder, baking soda, cinnamon, and the allspice into a bowl; set the bowl aside.
- Put the egg and sugar into a large bowl and beat the mixture until it is light and fluffy.
- Gradually add the oil and milk; continue beating for 1 minute.
- Stir in the grated potato and raisins, add the sifted flour mixture 1/2 cup at a time, mixing the batter after each addition, just until flour is blended.
- Spoon the batter into the pan.
- Bake the loaf until a toothpick inserted into the center comes out clean about 28 - 35 minutes (do not over bake ).
- Let the bread stand for 10 min. before turning out onto a rack.
- Cool bread completely before slicing.
- Spread non fat Greek yogurt on a slice for extra deliciousness.
